Double Lemon Vinaigrette

Check out Chuck's recipe for Spring Green Salad.  This is the perfect dressing for it.  Barb l.

Ingredients:

1 ½ Tbsp minced shallots

1 ½ Tbsp Flying Olive Lemon Extra Virgin Olive Oil

¾ tsp grated lemon rind

1 Tbsp Flying Olive Sicilian Lemon Balsamic Vinegar

½ Tbsp Dijon mustard

¼ tsp kosher salt

¼ cup chopped fresh mint leaves or 1 Tbsp dried mint

¼ tsp freshly ground black pepper

Salad Greens of your choice, nuts, and an avocado.  (Perfect on the Spring Green Salad)

Directions:

Whisk together the shallots, Flying Olive Lemon Extra Virgin Olive Oil, lemon rind, Flying Olive Sicilian Lemon Balsamic Vinegar, mustard, salt, mint, and pepper in a large bowl.

Add to your choice of greens.  Toss and serve. Refrigerate any leftover for up to 5 days.
