Kate's Easy Grilled Shrimp

 

Our daughter, Kate, served us these scrumptious shrimp when we were visiting. Grilled or broiled, guests will think you slaved over these. Delicious!

Serves: 4

Ingredients:

1 lb thawed, deveined, and peeled shrimp, at least size 41-50/lb

1Tbsp Flying Olive Extra Virgin Olive Oil of Choice. This can be a flavored or Single Varietal of your choice. We’ve tried Persian Lime, Garlic, Chipotle, Harissa, Lemon, Tuscan Herb, or Combinations…the list goes on. They are all good!)

1 Tbsp chili powder of your choice, spicy or not, more if desired

Juice of one Lime

Salt and Pepper to taste

Chopped parsley and/or lemon wedges to garnish and serve

Directions:

Heat the grill to high or the oven to broil.

Prepare shrimp. Pat dry with paper towels. Place in a large bowl and drizzle with the Flying Olive EVOO of Choice. Add the the chili powder, lime juice, salt, and pepper and toss until well combined.

Thread about 6-8 shrimp on each skewer. Place on the grill for 2-3 minutes. Turn and continue cooking for 1 more minute. Check for doneness. Remove from the heat and place on a platter. Sprinkle with parsley, if desired, and serve.
