Orange, Cherry Tomatoes, and Watermelon Salad

Using the warm spices and a hint of spicy EVOO to this salad adds a delicious, unique taste to this easy fruit salad—Barb L.

Serves: 4

Ingredients:

1 large navel orange

½ tsp ground coriander

½ tsp ground cumin

½ tsp sea salt

1 tsp Flying Olive Blood Orange, Harissa, or Chipotle Extra Virgin Olive Oil, or a Combination (we like 3/4 tsp Blood Orange and ¼ tsp Harissa—just a taste of spiciness)

4 cups cubed watermelon

2 cups cherry tomatoes, halved (I like using the multicolored ones)

1-2 Tbsp chopped mint and a sprig to garnish, if desired

Directions:

Cut away the peel and white pith of the orange. Working over a large bowl, cut between the membranes to release the segments. Squeeze the juice from the remaining membranes in to the bowl. Stir in the coriander, cumin, salt, and Flying Olive EVOO or Combination of Choice.

Add the watermelon, tomatoes, and mint. Toss gently to combine.
