Coconut Lime Pork (or Chicken) Kabobs

This photo shows chicken chunks.  Different colors of peppers and veggies make them much more eye catching.  The fun is letting everyone make their own kebobs with their choice of meat, fruit, and veggies. Unless there are allergies to consider, the Coconut Balsamic is really the best choice. Barb L

Ingredients:

¼ cup Flying Olive's Persian Lime Olive Oil plus 1-2 Tbsps more to coat fruits and veggies

¼ cup Flying Olive's Coconut or Pineapple Balsamic Vinegar

1 tsp honey or sweetener of choice

1/2 lime, juiced (about 2 tsps)

1 tsp chili powder

1/2 tsp EACH: paprika, onion powder, garlic powder, minced ginger root

Salt, pepper and cayenne to taste (I like to add a few drops of Flying Olive Cayenne Red Chili Extra Virgin Olive Oil)

1 lb pork loin or boneless chicken breasts, cut into 1 ½" pieces

Skewers (soak wooden skewers at least 30 minutes)

About 1 cup each of your favorite fruits and veggies (see pineapple recipe below), cut into 1 ½" chunks. Mix in a small amount of Persian Lime EVOO over veggies to coat before threading onto skewers.

Directions:

In a small bowl, whisk together the coconut balsamic, Persian Lime EVOO, honey, and lime juice. Season with chili powder, paprika, onion and garlic powders, ginger, cayenne pepper or Cayenne Red Chili EVOO, salt, and black pepper. Place the meat in a zip closure bag with the marinade, and stir to coat. Marinate pork in the refrigerator at least 2-3 hours (chicken 1-2 hours). Flip ½ way through.

Lightly oil the grill. Preheat to med-high heat. Thread meat and veggies onto skewers, and discard marinade. Turn grill down to prevent flare-ups. Grill skewers for 10 - 20 minutes, or until the meat juices run clear.

Coconut Lime Pineapple

1-20 oz can of pineapple chunks, drained. Reserve liquid.

2 Tablespoons EACH Flying Olive's Coconut or Pineapple Balsamic Vinegar, Flying Olive's Persian Lime EVOO & reserved pineapple juice

Preparation for Marinade:

Whisk ingredients together, place in zip closure bag. Marinate in refrigerator until ready to put skewers together. Thread onto skewers. Grill about 10 minutes.
