Flying Olive's Maple and Orange Granola

Ingredients:

3 ½ cups Old Fashioned Oats

4 Tbsp brown sugar, divided

¼- ½ tsp salt (less if seeds and nuts are salted)

¼ cup Flying Olive Maple Balsamic Vinegar

¼ cup Flying Olive Blood Orange EVOO

1 ½ Tbsp water

1 tsp vanilla

Cooking spray

½ cup raw, unsalted pepitas (pumpkin seeds), or sliced almonds, chopped pecans, sunflower seeds, or a mixture

¾ cup dried cranberries or a mix of chopped dried fruit. (I really like Sunsweet’s “Amazin’ Berry Blend” It has a mix of dried plums, cherries, cranberries, and blueberries)

Preparation:

Mix oats, 3 Tbsp brown sugar, and salt together in a large bowl. In a small saucepan, combine the Maple Balsamic, Blood Orange EVOO, water, 1 Tbsp brown sugar and vanilla in the pan over low-medium heat. Stir until the syrup mixture comes to a boil. Remove from heat.

Move the oven rack to the middle. Turn oven on to 300 degrees. Spray a cookie sheet (with sides) lightly.

Drizzle the syrup mixture into the oats while stirring. Spread the mixture onto the cookie sheet and add the pepitas or other seeds and nuts. Place the mixture into the oven and bake for 30 minutes, stirring half-way through. Add the dried fruit and bake for 15 more minutes. Cool and store in an airtight container.
