French Balsamic Vinaigrette

Makes approximately 1/4-1/2 cup

Ingredients:

2 cloves garlic, minced

2 tsp honey

1 tsp Dijon mustard

4 tsp freshly squeezed tangerine or orange juice (add a bit more if vinaigrette is thick)

2 Tbsp Flying Olive's Tangerine Balsamic Vinegar

¼- ½ tsp freshly ground black pepper (to taste)

2 Tbsp Flying Olive's Herbs de Provence Extra Virgin Olive Oil

½ tsp fresh thyme leaves

Your choice of greens (a combination that includes arugula and spinach is especially good!)

Directions:

Combine all ingredients except oil in blender.  With machine running, slowly add oil until thoroughly blended.  Let sit for a few minutes for flavors to blend.  Pour on greens.  Toss.
