Princess Watermelon and Mozzarella Salad

Yield: about 3-4 cups salad

Ingredients:

2 cups watermelon, cut into about 1" cubes

1 cup arugula, torn or chopped into medium pieces

1 medium tomato, seeds removed and chopped fine

6 oz fresh mozzarella balls

2 Tbsp Flying Olive 18 Year Traditional Balsamic Vinegar

Salt and freshly ground black pepper to taste

Directions:

Place mozzarella balls in a cup or small bowl.  Pour Flying Olive 18 Year Traditional Balsamic Vinegar, salt, and pepper and gently mix with a large spoon.  Place in refrigerator and let marinate for 15-30 minutes.

When ready to serve salad, mix watermelon, arugula, and tomato in a serving bowl. Pour mozzarella and the marinade into the salad and gently stir to combine.  Adjust seasonings to taste.  Add a little more Flying Olive 18 Year Traditional Balsamic if desired.  Serve immediately.
