Green Beans with Garlic, Lemon, and Pine Nuts

Ingredients:

1/4 cup pine nuts, toasted+

1 1/2 lb green beans

2 Tbsp Flying Olive Gremolata, Lemon, or Garlic Extra Virgin Olive Oil

1 1/2 teaspoons finely grated fresh lemon zest

2 Tbsp finely chopped fresh flat-leaf parsley or 1 Tbsp dried parsley

1 fat clove garlic, minced fine

Salt and pepper to taste

Preparation:

Bring 4 qts of water to a boil in a large pot.  Add a pinch of salt.

Add the pine nuts to a dry skillet over low-medium heat.  Toast, watching carefully, for about 5 minutes.  Remove to a plate.

Prepare green beans by tipping and tailing them.  Cut diagonally into 1/2" pieces.  When water boils, add the beans and cook for about 5 minutes or until tender, then drain well in a colander.

In the same skillet the pine nuts were toasted in, add the Flying Olive EVOO of choice, warm on low-medium heat a little and then add the flat-leaf parsley, the lemon zest, and garlic.  Cook until the garlic just becomes fragrant.  Add the beans and gently toss to coat. Add salt and pepper to taste.  When ready to serve, add the pine nuts to the top of the beans.  Serve.
