Ginger Glazed Mahi Mahi

Ingredients:

3 Tbsp Flying Olive Honey Ginger Balsamic Vinegar

2 tsp Flying Olive Garlic Extra Virgin Olive Oil or mild Flying Olive Extra Virgin Olive Oil of choice

1 tsp honey

3 Tbsp soy sauce, preferably low sodium

1 tsp grated fresh ginger root

1 clove garlic, crushed and chopped

2-4 (6 ounce) mahi mahi fillets

A pinch of Salts of the Earth Hawaiian Sweet and Salty Sea Salt* or sea salt of choice

Freshly ground black pepper to taste

A pinch of red pepper flakes or chilipaste, optional

Directions:

In a shallow glass dish, stir together the Flying Olive Honey Ginger Balsamic Vinegar, Flying Olive Garlic Extra Virgin Olive Oil, honey, soy sauce, ginger, garlic and olive oil. Season fish fillets withsalt and pepper, and place them into  the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.

Heat oven to 350 degrees. Place fish and marinade in the oven. Cook for about 10-15 minutes depending on the thickness of the fillets. Be sure to check after the first 10 minutes for doneness. Fish is done when it flakes easily with a fork. Remove fillets to a serving platter and keep warm.

Pour any liquid from fish into a saucepan. Heat over medium heat until the mixture reduces to a glaze consistency, about 5 minutes. Spoon glaze over fish, and serve immediately.
