Stuffed Chicken Breasts

Yield: Two Breasts


Ingredients:*
2 cups loosely packed pre-washed baby spinach
2 chicken breasts
½ cup shredded cheese of choice such as mozzarella or Parmesan
3-4 Tbsp Flying Olive Garlic, Tuscan Herb, Single Varietal of Choice, or Sicilian Garlic or Parmesan Dipping Oils
6 thin slices of pepperoni, chopped
3/4 cup of Panko or regular unseasoned bread crumbs
3/4 tsp Italian Seasonings
½ tsp garlic powder
Salt and pepper

Directions:
Place the spinach in a skillet with just a little bit of Flying Olive Extra Virgin Olive Oil of choice. Sauté over medium heat until the spinach is just wilted. Set aside to cool.


Place washed and dried chicken breast on a flat surface. Carefully cut  a small slit in the thick side of each breast. Moving the knife sideways, so that the initial cut remains the same size, cut the chicken breast on the inside, parallel to the flat surface, until a pocket forms. Set aside.


Roughly chop the cooled spinach, if it is large. Add the cheese and stir. Add the pepperoni and toss. Taking small bits, place inside each chicken breast, stuffing the bottom first and working up to the top of the breast. Repeat with the other breast.


Place Panko bread crumbs in a shallow dish. Add the seasonings and gently stir.


Place the skillet back on med heat. Place all but 1 Tbsp of the remaining Flying Olive EVOO in the pan to heat, watching carefully.


Turn the oven on to 375 degrees F.


Sprinkle salt and pepper on each chicken breast on both sides. Brush them with a small amount of Flying Olive EVOO and press the breast into the bread crumbs. When the oil is hot, add the chicken breasts. Cook for about 3 minutes on each side until browned, taking care that the breasts don't burn. Place into a baking pan and cook for an additional 3-8 minutes until breasts are done, depending on their thickness. Use a thermometer to insure the chicken is done.

Remove from the oven and let sit 5 minutes, tented under foil. Slice each breast diagonally across the middle and serve. If desired, serve with your world famous spaghetti sauce.


*Try other combinations such as precooked broccoli and cheddar, sundried tomatoes and cheese, fresh tomatoes, mozzarella, and fresh basil, etc.
