Slow Cooked Pork Loin with Gravenstein Apple and Onions

Yield: 6 servings

Ingredients:

2-3 apples, cored and sliced, about 4 cups

1 large sweet onion, chopped, about 3 cups

1 Tbsp Flying Olive Herbs de Provence, Garlic, Rosemary, or Flying Olive Single Varietal of Choice Extra Virgin Olive Oil

1 3-4 lb pork loin with fat removed

Salt and freshly ground pepper

3-4 cloves garlic, minced

1 Tbsp fresh rosemary, minced, or 1 tsp dried

1 Tbsp fresh parsley, minced, or 1 tsp dried

1 Tbsp fresh thyme, minced, or 1 tsp dried

½ cup Flying Olive Gravenstein Apple Balsamic Vinegar

Directions:

Prepare the apples and the onions. Remove any extra fat from the pork loin. Chop the garlic and herbs, if fresh.

Place half the onions and apples in the bottom of the slow cooker. Rub the Flying Olive EVOO of Choice all over the pork loin. Sprinkle with salt and pepper and place in the slow cooker.

Add the garlic, rosemary, parsley, and thyme to the top of the pork loin. Add the Flying Olive Gravenstein Apple Balsamic Vinegar to the top of the pork. Add the remaining apples and onions. Place the top on.

Cook on low for 7-8 hours. When done cooking, remove the pork from the crock pot and let sit for 10 minutes loosely covered with foil. Remove the apple and onion mixture, and serve as a side for the pork.
