Apple and Cranberry Salad

The flavors of the apples and cranberries mixed with Flying Olive Balsamics make an unbelievably tasty Waldorf-like Salad. No mayo or fat, unless you add the nuts and cheese! Barb L.

Serves: 4

Ingredients: 

1 celery stalk, about ¼ cup, diced into small pieces, if desired

1 red apple, diced into bite-sized pieces, about 1 cup

1 yellow or green apple, diced into bite-sized pieces, about 1 cup

2 Tbsp Flying Olive 25 Year White Balsamic or agave nectar or honey

1-2 Tbsp Flying Olive Gravenstein Apple or Cranberry Pear White Balsamic or a combination

¼ tsp Salts-of-the-Earth Hawaiian Sweet and Salty Sea Salt or Sea Salt of Choice

½ cup walnuts or pecan pieces

A slice or crumbled gorgonzola or blue cheese, optional, about 1 Tbsp per serving

4 large lettuce leaves or greens, if desired (I like to add a little peppery arugula)

Directions:

Prepare the celery (if desired) and apples. Place in a large bowl and add the Flying Olive 25 Year White Balsamic Vinegar. Toss to coat all the pieces and to prevent browning. Add the Flying Olive Balsamic(s) of Choice. Add salt. Taste and add more white balsamic and/or salt to taste.

Cover and refrigerate until ready to serve.

Just before serving, sprinkle with nuts. Add the crumbled or sliced cheese, if desired. Serve on a lettuce leaf or a bed of greens.
