Garlic and Lemon Couscous with Pistachios and Golden Raisins

 

                                    

Yield: 4-6 Servings

Ingredients:

1 cup of couscous

1 ¼ cup of water

1/3 cup golden or regular raisins

½ cup shelled, chopped pistachios

¼-1/2 tsp dried, crushed mint

1 tsp each Flying Olive Garlic and Eureka Lemon Extra Virgin Olive Oils.

Salt and pepper to taste

Directions:

Bring the water with a pinch of salt to a boil in a medium saucepan.  Stir in the couscous and cover.  Remove the pan from the heat and add the raisins. Let sit for 10 minutes. Stir in the chopped pistachios, mint, and the Flying Olive Garlic and Eureka Lemon Extra Virgin Olive Oils. Season with salt and pepper. Cover until ready to serve. Fluff with a fork. Serve.
