Tilapia with Orange and Soy Marinade

 

Another quick marinating recipe. I would highly recommend using low sodium soy sauce. If not, when you make the marinade into a sauce, it condenses and becomes very salty--Barb L.

Serves: 4

Ingredients:

2/3 cup orange juice

1/3 cup low-sodium soy sauce

1 Tbsp honey

4-6oz tilapia fillets

1-3 Tbsp Flying Olive Blood Orange Extra Virgin Olive Oil

1 Orange for orange slices or segments, if desired, for garnish

Directions:

In a medium bowl, whisk the orange juice, soy sauce, and honey together. Rinse and pat dry the tilapia fillets. Add them to a gallon-sized zip-lock bag and pour on the marinade. Let them sit on the counter for 15 minutes, flipping the bag over half-way through. Remove the fillets from the bag, reserve the marinade, and pat dry the fillets.

Meanwhile, heat 2 Tbsp of the Flying Olive Blood Orange Extra Virgin Olive Oil in a large non-stick skillet over medium-high heat. When the oil shimmers, turn the heat down to medium. Add the fillets, in batches if necessary, adding more oil as needed. cook until golden brown, about 3-4 minutes. Flip the fish over and repeat on the other side, cooking about 3 minutes more.

Transfer the fillets to a plate and cover with foil. Add the reserved marinade to the skillet and bring to a boil. Reduce heat and continue to cook (for at least 5 minutes to kill any bacteria) until thick. It should coat the back of a spoon.

Plate the tilapia fillets. Drizzle the sauce over the fish and serve with a few orange segments or slices for garnish.
