Greek Salad Appetizer Bites

 

 

The Greek version of a Caprese Salad Bite. Quick, easy, and yummy! Barb L.

Yield: 16 Appetizers, about 8 servings

Ingredients:

¼ English cucumber, cut into 4 ½” slices and each slice cut into 4 pie-shaped pieces

¼ lb feta cheese, cut into 16 small cubes

8 pitted Kalamata olives, sliced in half, top to bottom

8 grape tomatoes, sliced in half, top to bottom

2 Tbsp Flying Olive Single Varietal Extra Virgin Olive Oil of Choice

Freshly ground black pepper

Dried ground oregano

16 Toothpicks

Directions:

Prepare the veggies and cheese.

Stab a toothpick through the olive, then the tomato half, feta cube, and finally the cucumber. The toothpick should be flush against the bottom of the cucumber. Arrange on a platter.

Drizzle with Flying Olive Single Varietal Extra Virgin Olive Oil of Choice. Sprinkle with oregano and black pepper.
