Garlic and Rosemary Roasted Salmon

Yield: 3-4 servings

Ingredients:

2 cloves garlic

2 fresh 6” rosemary sprigs, leaves removed and chopped (about 1 Tbsp chopped)

4 salmon fillets, about 1 ½ -2 pounds, (try to make them all the same size so they will cook at the same rate)

2 Tbsp Flying Olive Garlic, Lemon, or Rosemary Extra Virgin Olive Oil or a Combination of Choice

1/8 tsp sea salt

1/8 tsp freshly ground black pepper

Directions:

Preheat oven to 425 degrees. Peel and chop the garlic and rosemary and set aside.

Place the salmon on a parchment-lined or foil-lined baking sheet.

Brush the fish with Flying Olive Garlic, Lemon, or Rosemary Extra Virgin Olive Oil or a Combination. Sprinkle with salt, pepper, rosemary, and garlic.

Place in the oven and roast for approximately 10-12 minutes or until the salmon is translucent and flaky. Be careful not to overcook!
