Smoked Sausage Veggie and Apple Sheet Pan Dinner

The choice is yours as to what you’d like to include in this great, easy dinner. Use sweet or white potatoes instead of or in addition to the butternut squash, use green beans instead of Brussels sprouts, add some carrots--you get the idea! Play around with the herbs and varieties of Flying Olive EVOO’s to get your perfect dinner--Barb L.

Serves: 4


1 Smoked Turkey Sausage ring, about 12-13 oz., sliced into 1/3” thick “pennies”

16 oz butternut squash, peeled and diced into ¾ “cubes (about 3 cups)

16 oz Brussels Sprouts, halved top to bottom

½ medium red onion, diced into chunks

1 Tbsp minced garlic (about 3 cloves)

¼ cup Flying Olive Gremolata, Garlic, Thyme, Olive Wood Smoked,or a Combination of Choice Extra Virgin Olive Oils

1 tsp EACH dried and crushed thyme, sage, and rosemary

Salt and freshly ground black pepper

2 crisp apples, cored and diced into 1 ½ “chunks

2 Tbsp chopped fresh parsley


Preheat the oven to 400 degrees F. Place the Flying Olive Extra Virgin Olive Oil(s) in a small bowl. Brush the baking sheet with a little of the Olive Oil.

Add the sausage, butternut squash, Brussels sprouts, apples, onion, and garlic to the sheet pan.

Drizzle everything with the remaining EVOO. Sprinkle with the herbs, then season with salt and pepper to taste. Toss to coat.

Roast in the pre-heated oven for 15 minutes. Remove from the oven and toss.

Return the pan to the oven and continue to roast until the veggies and apples are tender, about 15 minutes longer.

Sprinkle with parsley and serve warm.
