Cuban Green Salad with Black Beans and Avocados

Serves: 8

Ingredients:

1 cup Flying Olive Cilantro and Roasted Onion, Persian Lime, or a Single Varietal of Choice Extra Virgin Olive Oil, divided

2 medium onions—red or sweet—halved lengthwise and thinly sliced

2/3 cup Flying Olive Neapolitan Herb Balsamic Vinegar or Serrano Honey Vinegar, divided

2 ½ Tbsp freshly squeezed lime juice

Salt and freshly ground black pepper to taste

½ tsp-? Sweetener, to taste, if desired

4 medium ripe tomatoes cut into sixths, or 1 cup cherry tomatoes, halved

4 medium ripe avocados, halved lengthwise and cut crosswise into sixths

3 heads of lettuce of your choice, torn into bite-sized pieces, such as a combination of Boston or Bibb, Romaine, and/or arugula

1 cup cooked or canned black beans rinsed and drained

Directions:

Heat ¼ cup of the Flying Olive EVOO of Choice in a large skillet over medium heat. When the oil shimmers, add the onions and cook, stirring occasionally, until golden brown and soft, about 10 minutes.

Add 1/3 cup of the Flying Olive Vinegar of Choice, and scrape up any browned bits on the bottom of the pan. Remove the skillet from the heat and allow to cool.

Meanwhile, make the vinaigrette. Combine the remaining 1/3 cup Flying Olive Vinegar and lime juice in a medium bowl or in a jar with a lid. Whisk or shake well. Add the remaining Flying Olive EVOO of Choice and whisk or shake well. Taste and season with salt, pepper, and sugar or sweetener, if desired (a lot will depend on which combination of oil(s) and vinegar you choose).

Combine the cooled onions, tomatoes, black beans, and avocados in one medium bowl. Add the lettuces to a large bowl. Add a little of the vinaigrette to the onion combination and toss to coat. Add ½ the remaining dressing to the lettuce bowl. Toss. Add more to each, as needed, to be sure everything is well coated.

Divide the lettuce among the plates. Spoon on the onion mixture (it will sink to the bottom of the bowl if you add everything together, never to be seen again!). Serve. Pass any remaining dressing for those who want a little more.
