Honey Ginger and Lemon Yogurt Parfaits

We’re always looking for a low calorie, healthy dessert. Rummage around and find what fruit you have of hand, using what you have. You might even want to play around with different balsamic mixtures depending on the fruit you have.Talk about easy and elegant! Barb L.

Ingredients:

1 cup plain yogurt (I used Plain Silk Soy and it works great!)

4 tsp Flying Olive Honey Ginger Balsamic Vinegar

4 tsp Flying Olive Sicilian Lemon or Mango Balsamic Vinegar (or half and half)

Sugar or Sweetener to taste, if desired

Fresh fruit, about 1 ½-2 cups (I used 1 very large Ataulfo mango, 1 large orange, and about 5-10 small strawberries as that was what I had on hand. Slice or dice the fruit separately for layering, OR mix it all together, your choice

Orange zest, a strawberry, a sprig of mint for garnish, if desired

Directions:

Mix the yogurt and the Flying Olive Balsamics together. Taste and add more balsamic and sugar or sweetener, as desired.

In a large wine glass, divide the fruit between the two glasses. You can either mix the fruit together or layer it (as I have in the photo). Add the orange on the bottom, add about 2 Tbsp of the yogurt mixture. Add the strawberries, add about 2 Tbsp of the yogurt mixture. Add the mango and another 2 Tbsp of yogurt. A note: if layering, use a splash of color in the middle (the strawberries are in the middle in the photo). Top with the remaining yogurt. Garnish, if desired.
