Roasted Pears with Lime and Balsamic Vinegar


Serves: 6 (unless your pears are very small)


3 large ripe pears

1-   1½ Flying Olive Lime or Lemon Extra Virgin Olive Oil

1-1½ Flying Olive Balsamic Vinegar of Choice such as: Maple, Pomegranate, Pomegranate-Quince, Cinnamon Pear, or Cranberry Pear

1 Tbsp maple syrup or honey, or sweetener of choice, more to taste

Zest from 1 large lime

1 cup Greek-style plain yogurt or smooth ricotta (I used plain soy yogurt)

1-   1½ Tbsp Flying Olive Sicilian Lemon or Honey Ginger Balsamic Vinegar

      A few shakes of ground cinnamon for garnish, if desired


Preheat the oven to 375 degrees F.

Line a baking sheet with parchment paper. Halve the pears lengthwise, remove the stems and cores. Place the pears on the baking sheet, cut side up. Brush the Flying Olive Extra Virgin Olive Oil of Choice over the pears and drizzle with honey or other sweetener and drizzle with the Flying Olive Balsamic Vinegar of Choice. Sprinkle with the lime zest.

Bake the pears for 18-20 minutes, depending on the size of the pears, until they have softened.

When done, place the portions on individual dessert plates, top with yogurt or ricotta. Drizzle with Flying Olive Balsamic Vinegar of Choice.  Sprinkle with cinnamon and serve.
