George Washington Beets

Ingredients:

2 Tbsp Flying Olive Lemon Extra Virgin Olive Oil

1 clove garlic, minced

¼ Flying Olive Cherry Balsamic Vinegar

¼ c cherry preserves (I use sugar free)

2 Tbsp dried cherries chopped if large, or cherry flavored dried cranberries, or dried cranberries

¼ tsp dried mint (optional)

1 can (14.5 oz) sliced beets, drained

Directions:

Heat the Flying Olive Lemon Extra Virgin Olive Oil in a skillet over low-medium heat. Add the garlic and stir for 1-2 minutes until fragrant. Add the Flying Olive Cherry Balsamic Vinegar and the cherry preserves and stir. Reduce heat to a simmer.

When the sauce begins to thicken, add the mint (optional) and the dried cherries. When all the ingredients are well mixed, add the drained beets and continue to simmer until well heated.
