Grilled Pork with Marinated Pineapple Slices

With or without the pineapple, these pork chops are delicious! BHL

Serves: 4


1 Tbsp freshly ground black pepper

2 tsp lime zest

2 tsp orange zest

1 tsp ground coriander or cumin

1 tsp ground cinnamon

½ tsp salt

¼ cup Flying OlivePersian Lime Extra Virgin Olive Oil

1 recipe of Grilled Mango Pineapple Slices (follow link)

1 lb boneless sirloin pork chops (about four thin chops)

A few sprigs of fresh cilantro or basil for garnish


Follow the recipe for Grilled Mango Pineapple Slices. When pineapple has marinated for at least 30 minute, start preparing the rub.

Combine the first 5 ingredients.

Turn the grill on to medium-high. While it is heating, rub the spice blend over the meat, rub the Flying Olive Persian Lime EVOO into the entire surface. Let sit a few minutes.

Start grilling the pineapple, following the instructions. About 3 minutes from when it is done, start the chops. Sear quickly on each side, for about a minute, then turn the heat off under the chops and let them cook another 2-3 minutes if thin, longer if thicker. Remove the chops and place under a foil tent for about 5-10 minutes.

Take the pineapple off the grill when it is done. Place under a foil tent as well.

When ready to serve, place a pineapple slice on a plate and place the pork chop on it. Serve and let people remove the rind from the pineapple, taking a bite of the pork and pineapple together. Enjoy!
