Sweet Potato Oven Fries


Yield: 4 Servings


3-4 sweet potatoes, peeled or unpeeled, your choice, scrubbed

3 Tbsp Flying Olive Extra Virgin Olive Oil of Choice: mild-medium Single Varietal, Garlic, Chipotle, Herbs de Provence, or Tuscan Herb are some of my favorites

½ tsp salt (I highly recommend using one of our Salts-of-the-Earth sea salts: Applewood Smoked aBcon, Mayan Gold, Arrabbiata di Roma, Chile Flake…)* or sea or kosher salt

Freshly ground black pepper


Peel the sweet potatoes, if desired. Cut off the ends and slice into strips.

Turn the oven on to 400 degrees F.

Place the strips in a large bowl and add the Flying Olive Extra Virgin Olive Oil of Choice. Add the salt and pepper and, with your very clean hands, toss them around until well coated.

Coat two large rimmed baking sheet with a little of the Flying Olive EVOO. Spread out the fries so that they are in a single layer. They will need a little room to cook best.

Place in the oven for about 10 minutes. Turn the fries over and continue cooking a few more minutes until the sweet potatoes are done, slightly puffy, and are browning around the edges.

Take them out of the oven, dust with more salt and pepper as needed, and serve immediately.
