Grilled Vegetable Medley

 

Yield: About 2 servings

Ingredients: (These veggies can vary according to what you have or what’s in season)

½ box cherry tomatoes

1 small-medium zucchini or yellow summer squash, cut into 1 ½” dice

1 cup diced onions. (I prefer sweet onions, but your choice)

1 Tbsp Flying Olive Lemon orGremolata Extra Virgin Olive Oil

1 Tbsp Flying Olive Garlic Extra Virgin Olive Oil

½ tsp dried oregano

Salt and freshly ground black pepper

Directions:

Cut up the veggies and place them in a large bowl. Drizzle on the Flying Olive Extra Virgin Olive Oil and sprinkle on the oregano. Mix well.

Place a grill pan on the grill. Heat the grill to high. When hot, place the drained (if needed-don’t want any flare ups!) veggies in the grill pan, turn down the grill to low-medium, and close the cover for 1-3 minutes until the veggies just begin to char.

Using a spatula, flip the veggies over. Grill for another 1-2 minutes until the tomatoes start to soften and the squash is almost tender. Be careful not to overcook!

Remove to a serving dish. Sprinkle with salt and pepper to taste. Serve.
