Summer Harvest Veggie Medley


Quick, easy, and always delicious. Vary the ingredients according to what you have or like. You can also cook this on the grill in a grill pan. Barb L.

Serves: 4-6


1 Tbsp Flying Olive Garlic, Chipotle (smoky with a little spiciness), Harissa (spicy with coriander, cumin, and caraway flavors), Baklouti Green Chili (hot with green pepper flavor) or other Flying Olive Extra Virgin Olive Oil of Choice

1 clove garlic, minced

½ yellow summer squash, cut into a 1 ½ “dice

½ green summer squash, cut into a 1 ½ “dice

1-? tsp jalapeno, ribs and seeds removed, minced, optional

1 cup frozen corn or cooked fresh corn cut off the cobs (I used the rest of my Sweet and Spicy Grilled Corn)

1 large ripe tomato, diced

2 large handfuls of fresh spinach, roughly chopped, if desired (about 2 cups)

½ tsp Italian seasonings

Salt and pepper to taste


Add the Flying Olive EVOO of Choice to a large skillet. Add the garlic and cook for about 30 seconds until it becomes fragrant. Add the squash and jalapeno and cook for 1-2 minutes. Add the corn and cook another 1-2 minutes. Add the diced tomato, spinach, and Italian seasonings and cook another 1-2 minutes until the spinach wilts. Taste and add salt and pepper if desired. Serve.
