Waldorf Spinach Salad

Delicious any day, but perfect for a special dinner. Barb L.

Yield: Makes 6 servings


1/4 cup honey

4 Tbsp Flying Olive Eureka Lemon Extra Virgin Olive Oil

3 Tbsp Flying Olive Gravenstein Apple Balsamic Vinegar

1/2 tsp dry mustard

1/4 tsp dry cinnamon

1 tsp garlic powder

1/8 teaspoon salt (try our Salts-of-the-Earth Hawaiian Sweet and Salty Sea Salt* in this!)

1 (8-9-oz.) package fresh spinach, torn

2 large Gala apples, thinly sliced

4 tsp blue cheese, crumbled (shown) or sharp cheddar cheese, shaved

1 cup thinly sliced celery (I use my mandolin)

1 cup honey-roasted cashews (some stores with bulk-food sections have these or, if not, use regular cashews)

1/2 cup golden or regular raisins


Whisk together the first 7 ingredients in a large serving bowl until well blended. Add spinach and remaining ingredients, tossing gently to coat. Serve immediately.
