Rustic Avocado Crostini

Yield: Approximately 4 large pieces


4 slices of good crusty bread (If they are REALLY big, cut in halves or quarters)
1 ripe avocado
½ tsp Flying Olive Garlic Extra Virgin Olive Oil, Basil Extra Virgin Olive Oil, or a Flying Olive single varietal of choice
2 pinches of Italian seasoning
Salt and pepper to taste
Several thin slices of tomato, cut into small pieces
4 basil leaves, cut into thin strips or minced


Turn oven on to 350 degrees.  Brush Flying Olive Basil EVOO or Flying Olive Garlic Extra Virgin Olive Oil on each piece of bread.  Place on a cookie sheet and toast until crisp and brown.

Meanwhile, peel and mash the avocado in a small bowl.  Add the Flying Olive Garlic or Basil EVOO, Italian seasonings, and salt and pepper to taste.

When the bread is done, spread the avocado on the toasted bread and add the tomato and basil.  Sprinkle with freshly ground pepper, salt, and more EVOO if desired.
