Grilled Chicken Skewers with Peanut Sauce

These delicious chicken skewers can be used as an appetizer or main course.  The peanut sauce is so good, you may

want to double the recipe! Barb L.

Serves: 4


16 wooden skewers soaked for an hour in water or use metal skewers

½ cup smooth peanut butter

1 clove garlic, roughly chopped

½ tsp grated fresh ginger

2 Tbsp lime juice, about 1 lime

2 Tbsp low-sodium soy sauce

1 tsp sugar or sugan subsitute

¼ tsp crushed red pepper flakes, optional

1/3 cup warm water

3 boneless, skinless chicken breast halves, about 1 1/3 lb, cut into 16, ¼ inch strips (or chicken tenders)

1 Tbsp Flying Olive Persian Lime Extra Virgin Olive Oil

1 Tbsp Flying Olive Chipotle, Harissa, or Cayenne Red Chili Extra Virgin Olive Oil (or, if you don’t like ANY spiciness, add an additional 1 Tbsp of Persian Lime)

Salt and freshly ground black pepper


Add the peanut butter garlic, ginger, lime juice, soy sauce, sugar, crushed red pepper, and 1/3 cup water in a blender. Blend until smooth.

Preheat the grill to high. Thread the chicken piece onto 16 skewers and place in 1 layer on a plate or baking sheet. Brush both sides of the chicken with the Flying Olive EVOO’s of Choice. Season with salt and pepper.

Grill the chicken until cooked through, turning once, about 4-6 minutes total. Serve immediately or at room temperature with the peanut sauce on the side.
