Watermelon with Mint Balsamic Glaze and Feta

Yield: 2 servings


2 Tbsp Flying Olive Lemongrass Mint Balsamic Vinegar

2 Tbsp Flying Olive 18 Yr. Traditional Balsamic Vinegar

1 tablespoon sugar

6 (roughly 4 by 2-inch) pieces of seedless watermelon (If you can get pink AND yellow watermelon, alternate them for some eye appeal!)

2-4 tsps feta cheese, crumbled

Mint sprigs for garnish

In a small saucepan, whisk together the Flying Olive Balsamic Vinegars and sugar.  Cook over low heat until reduced by half and syrupy, about 4-6 minutes.  The glaze should coat the back of a spoon.  Stack 3 pieces of watermelon on each plate and drizzle with the balsamic reduction.  Sprinkle with feta cheese and mint sprigs and serve.
