Savory Thyme Olive Oil Cookies

Yield: 40 Cookies


2 cups all-purpose flour
1 cup sugar
1/2 teaspoon baking powder
1 tsp freshly ground black pepper
1 Tbsp chopped fresh thyme leaves
1/2 cup Flying Olive Thyme Extra Virgin Olive Oil
3 Tbsp milk or soy milk
1 large lemon, zested and juiced (about ΒΌ cup juice)

Prepare the thyme leaves and lemon. Grind the pepper. Set these aside. Then, preheat the oven to 350 degrees F.

Line 2 baking sheets with parchment paper or silicone baking sheets. Put the flour, sugar, baking powder, pepper, and thyme into a bowl and whisk together to combine. In a small bowl, whisk together the Flying Olive Thyme Extra Virgin Olive Oil, milk, lemon juice, and zest. Add the liquid ingredients to the dry ingredients, stirring with a wooden spoon until you form a smooth dough. If you find the dough is too stiff, add a tsp of milk until you have the desired consistency.

Roll heaping teaspoonfuls of the dough into balls. Place them about 2 inches apart on the prepared baking sheets. Bake the cookies about 15-20 minutes, checking after 15 minutes. When they are browned around the edges, they are done. Let the cookies cool for a few minutes and then transfer them to wire racks to cool completely. (Note: Wait until the cookies are cooled to try them. The flavors blend much better).
