Black Cherry, Sesame and Ginger Vinaigrette

This vinaigrette has it all: sweet cherries, a hint of savory nuts from the sesame oil, a spark from the ginger, and sweetness from the honey. Wonderful on a green salad with dried cherries or craisins, cheese, and nuts or a tuna or salmon salad with some additional condiments such as cucumbers, red onion, slivered almonds, and/or edamame.

Yield: about ¼ cup dressing, enough for 4 salads

Ingredients:

2 ½ Tbsp Flying Olive Black Cherry Balsamic Vinegar

4 tsp Flying Olive Mild-Medium Single Varietal Extra Virgin Olive Oil or a flavored oil such as Persian Lime or Lemon (the last two will make it a little tangier. You might need to add more sweetener after tasting)

1 tsp Flying Olive Honey Ginger Balsamic

1 tsp Dijon mustard

½ tsp honey or sweetener of choice, even sugar free, more to taste

½ tsp grated and peeled fresh ginger

¼ tsp kosher salt

8 cups greens such as red leaf, baby kale, arugula, Boston, etc.

Garnish Suggestions: dried cherries, chopped; craisin; goat, cheddar, or mozzarela cheese; cucumbers, sliced thin; red slivered onions; slivered almonds; edamame...

Directions:

Combine all the ingredients except for the greens in a jar with a tight-fitting lid or in a small bowl. Shake or whisk until well combined.

Add half the dressing to the salad greens. Toss the salad, add more as desired. Divide between 4 plates and serve. Add your favorite garnishes.
