Spice and Non-Spice Wimps Tomato Salsa

(Heat lovers, add more of items with asterisks!)

Makes 3-4 cups depending on the size of your tomatoes


2 large tomatoes, diced

*½ medium red onion diced or ½ tsp dried onion powder

¼ tsp or *more Flying Olive Baklouti Green Chili EVOO

2 Tbsp Flying Olive Persian Lime EVOO

1 Tbsp freshly squeezed lime juice

½ cup chopped or torn cilantro

1 tsp Flying Olive Jalapeno Balsamic Vinegar (adds the flavor of jalapenos without the heat)

*1-2 jalapeno peppers, seeded and finely diced (avoid using the seeds and ribs unless you LOVE more heat).  Use gloves and don't touch your eyes!

¼ tsp salt, to season at end


Combine all the ingredients except for the salt (and the extra *ed ingredients, if you choose) and mix to combine well.

Allow the flavors to combine for about an hour, then mix well, stir in the salt to taste and serve.

Note: Adding the salt makes the liquid come out of the tomatoes.  You may need to drain most of the liquid before refrigerating your leftovers.
