Sweet and Savory Marinade for Pork or Beef


1/3 cup Flying Olive’s Pomegranate,Red Apple,or Fig Balsamic Vinegar

1/4 cup Flying Olive’s Garlic or Chipotle Olive Oil

1 Tbsp. good quality Dijon mustard

2 tsp kosher, sea salt, or Salts-of-the Earth Sea Salt of choice*

4 pork loin chops or rib eye steaks

Parsley for garnishing, if desired


In a medium bowl, whisk the mustard with the salt. Add the Flying Olive Balsamic Vinegar of choice and mix until blended thoroughly. Slowly drizzle in the Flying Olive Extra Virgin Olive Oil of Choice, whisking quickly and continuously. The marinade should become thick and emulsified.

In a container or large zip-lock bag, place up to four pork loin chops or rib eye steaks and thoroughly coat with the marinade. Refrigerate and marinate for 4-8 hours, turning the bag at least once during the process.

Prepare the grill on med hot or oven to broil.

Drain the marinade. Grill or broil the chops/steaks until they reach a little less than the desired doneness. (They will cook a bit after you take them out of the oven or off the grill.) After cooking, allow the steaks to rest covered for 10 minutes before serving. Garnish with chopped parsley, if desired.
