Caprese Salmon


A quick, easy, and yummy recipe. Can we ever get enough caprese-inspired dishes?

Serves: 4


4 salmon fillets, about 1 pound (the photo shows a monstrous fillet, about ½ pound)

1 Tbsp Flying Olive Lemon, Garlic, or Basil Extra Virgin Olive Oil

4 mozzarella cheese slices

1 medium tomato

4 large fresh basil leaves

1 tsp minced garlic

2 Tbsp Romano or Parmesan cheese, grated

1 lemon cut into 4 weges

Salt and Pepper to taste


Preheat the oven to 400 degrees F. Brush the Flying Olive EVOO of choice on a foil-lined baking sheet . Add the fish and brush any remaining EVOO over the top and sides of the fillets.

Arrange the toppings on the fillets in this suggested order: a slice of cheese, topped with a tomato slice, a basil leaf, and ¼ of the garlic. Sprinkle the top with the Romano or Parmesan cheese (or use more mozzarella if desired).

Bake 12-14 minutes depending on the thickness of the salmon fillet. Squeeze the lemon juice over each fillet before serving.
