Cod Baked in Parchment Paper

This is amazingly easy and looks so cool. And besides tasting really wonderful, clean-up is a snap! Barb L.

Parchment paper

1/2- 2 pounds fresh cod fillet

4 slices tomato

Kosher salt and freshly ground black pepper to taste

1 tsp dried or 4 tsp small, fresh sprigs of oregano

1-2 tsp fresh lime juice, more as desired

2 tsp Flying Olive Lime, Lemon, or a mild-medium Flying Olive Single Varietal Extra Virgin Olive Oil


Preheat the oven to 400 degrees F.

Tear off 4 large piece of parchment paper. Fold the parchment paper in half. Using scissors, cut a half heart shape. Open the parchment. You should have a heart-shaped piec of paper.

Place each cod filet on one side of the heart. Lay the tomato slice over the cod. Sprinkle with salt, pepper, and oregano. Drizzle the lime juice and Flying Olive EVOO of Choice over the fish.

Fold the parchment paper into a heart half again, and crimp the edges to seal. It should  look like an empanada. Place the packet on a baking sheet lined with foil.

Bake the fish for about 10-12 minutes (depending on the thickness of the fish). Remove the fish packet from the oven. Carefully unseal the package. Gently transfer the fish to a plate and serve.
