Quick and Easy Tomato-Basil Salmon

This recipe is so easy and fast. Simmering the salmon with tomatoes and basil is an ideal way to enjoy fish, even for people who aren’t big

Serves: 4, 1 fillet each


1 Tbsp Flying olive Basil, Garlic, or a Single Varietal of Extra Virgin Olive Oil of Choice

1 medium onion, chopped

2 garlic cloves, minced

1 large tomato, chopped

¼ tsp salt

¼ tsp black pepper

4 salmon fillets, about 4 ounces each

½ cup dry white wine

¼ cup low sodium chicken broth

¼ cup chopped fresh basil

1 Tbsp tomato paste


In a large skillet, heat the Flying Olive Extra Virgin Olive Oil of Choice over medium heat. Add the onion and garlic. Sauté for about 3-4 minutes or until tender. Stir in the tomato, salt, and pepper. Cover the pan and reduce the heat to low. Simmer for about 5 minutes.

Add the salmon fillets to the pan. Add the wine and chicken broth. Cover and cook for 7 minutes.

Uncover the skillet and stir in the basil and the tomato paste. Simmer for 4-5 minutes, or until the sauce is reduced and the salmon flakes easily with a fork. Plate the salmon and top it with the sauce.
