Chipotle Blackened Tilapia


3 Tbsp smoked paprika

1 tsp salt

1 Tbsp onion powder

1 tsp ground black pepper

1 tsp dried ground thyme

1 tsp dried oregano

1/2 tsp garlic powder

1 tsp chili powder

2-4 Tbsp Flying Olive Chipotle Extra Virgin Olive Oil

4 tilapia fillets, washed and patted dry

Lemon wedges, if desired

Chopped parsley to garnish, if desired


Turn the oven on to
425 degrees.

In a small bowl combine all of the spices. Lightly grease a baking dish with the Flying Olive Chipotle EVOO. Brush each side of the tilapia fillets with Flying Olive Chipotle EVOO. Sprinkle the fillets with the spice mixture and press into each fillet so that both sides are liberally coated. Allow the fish to sit for 15 minutes at room temperature prior to cooking.

Cook the fish for about 20-25 minutes until it flakes easily with a fork. Place on a platter and garnish with parsley. If desired, serve the lemon wedges on the side.
