Citrus Salmon

Serves: 4

Zest 2 oranges and 3 lemons

Juice of 2 oranges

Juice the 1 ½ lemons

2 Tbsp soy sauce

2 Tbsp honey, optional

3 Tbsp Flying Olive Blood Orange or Lemon Extra Virgin Olive Oil or a Combination

2 pounds skin-on salmon fillet

½ tsp salt

½ tsp pepper


Zest the orange and lemon and set the zest aside. Then, squeeze the oranges and 1 ½ lemons.

In a large baking dish, combine the orange juice, lemon juice, soy sauce, honey, and Flying Olive Extra Virgin Olive Oil(s) of Choice.

Season the salmon on both sides with the salt and pepper and place in the dish. Add the juice mixture and marinate in the refrigerator for 45 minutes per side.

When ready to cook the salmon, turn on the broiler. Place the salmon, skin side down, and the marinade under the broiler. Cook for approximately 10-12 minutes, depending on the thickness of the fish.

Serve the fish immediately, spooning the cooked juice from the baking dish over the salmon. Sprinkle with the zest, if desired.
