Honey Ginger Snap Pea Salad

Serves: 4


¼ cup Flying Olive Honey Ginger or Lemongrass Mint Balsamic Vinegar

1 Tbsp finely grated fresh ginger

¼ tsp salt, optional

¼ tsp pepper

8 oz snap peas, cut into 1” pieces

6 radishes, sliced thin

2 kirby or ½ English cucumber, sliced thin (I use my mandolin)

¼ small white onion, sliced into thin strips

¼ cup fresh mint, roughly chopped


In a small bowl or a jar with a lid, combine the Flying Olive Balsamic Vinegar of Choice, ginger, salt, and pepper. Whisk or shake to combine. Set aside.

In a large bowl, add the snap peas, radishes, cucumbers, and sweet onion strips. Add the vinaigrette and mint. Fold together and serve.
