Tomato, Watermelon, and Avocado Salad


Serves: 4


1 ½ cups cubed medium tomatoes, 1” dice or cherry tomatoes, halved

1 ½ cups cubed watermelon, 1” dice

Zest of 1 lime (zest first, then squeeze for juice)

2 Tbsp peeled and grated fresh ginger

½ Tbsp freshly squeezed lime juice

¼ tsp kosher salt

1 firm ripe avocado (if you want a creamier-type look, use a ripe avocado as shown in photo)

2 tsp Flying Olive Lime Extra Virgin Olive Oil

2 tsp Flying Olive Honey Ginger Balsamic Vinegar or Serrano Honey Vinegar

½-1 tsp sugar or sugar substitute, as needed (this will depend on how sweet your tomatoes and watermelon are)

2 Tbsp torn fresh mint leaves


Gently toss the tomatoes, watermelon, and lime zest in a medium bowl.

Place the ginger in a fine-mesh strainer over a small bowl and press on it to extract all its juice. Discard the pulp. Whisk the lime juice, Flying Olive Lime Extra Virgin Olive Oil, Flying Olive Balsamic Vinegar of Choice, and kosher salt into the ginger/lime juice combination

Add the ginger/lime mixture to the tomato mixture along with the avocado. GENTLY toss or fold to combine. Sprinkle with mint and more salt, if needed.
