Citrusy Yogurt Avocado Salad

Serves: 4
Ingredients:
½ cup plain yogurt (any type will work such as soy, coconut, etc.)
1 Tbsp Flying Olive Sicilian Lemon or Grapefruit Balsamic Vinegar
¼ tsp salt
4 cups loosely packed baby arugula
1 ripe avocado, sliced
3-4 Tbsp chopped cilantro
2 Tbsp toasted cashews, chopped
Directions:
Whisk together yogurt, Flying Olive Balsamic Vinegar of Choice, and salt in a small bowl. Divide the arugula among 4 plates. Add the avocado sliced and drizzle on the dressing. Garnish with the chopped cilantro and the cashews. Serve.
