Cantaloupe and Cucumber Salad with Fresh Za'atar

Za’atar is a condiment with a woodsy, herbal, and citrusy blend of spices from the Middle East. Usually it’s made with dried herbs, but if you have fresh herbs, the flavor is fresh and incredible--

5 Tbsp Flying Olive Persian Lime, a Single Varietal of Choice, or a Combination

2 Tbsp toasted sesame seeds, divided

1 Tbsp ground sumac

2 tsp chopped fresh oregano

2 tsp chopped fresh thyme

¼ tsp salt

½ English cucumber, shaved into long strips

2 Tbsp lime juice (If using Persian Lime EVOO, you might want to reduce this by ½ Tbsp)

1 medium cantaloupe (about 4 pounds) seeded, rind removed, and cut into wedges

1 cup crumbled feta cheese


Combine 4 Tbsp o Flying Olive EVOO of Choice, 1 Tbsp sesame seeds, sumac, oregano, thyme, and salt in a small bowl.

Toss the cucumber with the remaining 1 tbsp of oil and lime juice in a medium bowl. Arrange the cantaloupe and the cucumber on a serving platter or on individual plates. Drizzle with any liquid remaining in the bowl. Top with the feta, the dressing, and the remaining 1 Tbsp of sesame seeds.
