Sicilian Lemon Spinach Salad


1 bunch (9ozs.) fresh spinach leaves, approximately 4 cups, washed, with stems removed

8 ounces strawberries, sliced in quarters.

1/4 cup small red onion, sliced

1/2 cucumber, sliced in quarters, seeds removed if tough

1/4 cup sliced almonds, (can be toasted lightly in over)

1/2 tsp of lemon zest

2 Tbsp of fresh lemon juice

1 1/2 tsp poppy seeds

1 1/2 Tbsp- 1/3 cup  sugar or artificial sugar, to taste

1 1/2 Tbsp Flying Olive Lemon Extra Virgin Olive Oil

3 tsp Flying Olive Sicilian Lemon Balsamic Vinegar


In a small bowl, mix poppy seeds, Flying Olive Lemon Extra Virgin Olive Oil,Flying Olive Sicilian Lemon Balsamic Vinegar, sugar, lemon, juice, and lemon zest. Whisk until well blended. Refrigerate dressing to help flavors blend and poppy seeds to soften. Slice cucumber. Slice onion. Place spinach in a large bowl, mix in strawberries, onions, and cucumbers.

Pour dressing over spinach mix. Toss well, then sprinkle with toasted almonds.
