Citrus and Cilantro Roasted Onion Salad


Makes approximately ¼ cup of Vinaigrette


2 Tbsp Flying Olive Sicilian Lemon Balsamic Vinegar

1 Tbsp Flying Olive Lime Extra Virgin Olive Oil

1 Tbsp Flying Olive Cilantro and Roasted Onion Extra Virgin Olive Oil

1 clove garlic, smashed and chopped fine

¼ tsp cumin (optional)

Salt and pepper to taste

4-6 cups lettuce greens of your choice

¼ cup chopped fresh cilantro

1 small purple onion cut into 2" strips

1 avocado, diced


Whisk together the Flying Olive Sicilian Lemon Balsamic and the Flying Olive EVOOs. Add the chopped garlic and the cumin, salt and freshly ground black pepper to taste.  Refrigerate until ready to use.  Prepare the salad greens. Top with the onion and avocado. Remix the dressing and pour on the greens. Sprinkle with the fresh cilantro and serve.
