Strawberry Bergamot Salad

Makes 4 salads


¼ cup Flying Olive Strawberry Balsamic Vinegar

¼ cup Flying Olive Bergamot Extra Virgin Olive Oil

1 tsp Dijon mustard

¼ tsp garlic powder

¼ tsp onion powder

1 tsp honey or sweetener of choice

Salt and freshly ground pepper to taste

8 small-medium strawberries, sliced

Feta cheese to taste (start with a Tbsp for each salad)

Sliced almonds (start with a Tbsp for each salad)

Salad greens such as baby lettuces, radicchio, arugula, or greens of your choice


Clean and prepare greens and divide among 4 plates

In a small jar or bowl, whisk together the Flying Olive Strawberry Balsamic and the Flying Olive Bergamot EVOO.  Stir in mustard, garlic and onion powders, sweetener, and salt and
freshly ground black pepper to taste.  Shake or stir well.  Taste and adjust seasonings and sweetness.

Slice the strawberries and divide among salads, along with the almonds and feta.  Drizzle the dressing, and serve.  Refrigerate the remaining dressing for up to 3 days.
