Mojito Fruit Salad

Yield: 6 servings

Ingredients:

Approximately 5 cups of fruit, your choice. (Various colors really add to the attractiveness of this salad), cut into bite-sized pieces

3 Tbsp Flying Olive Lemongrass Mint Balsamic Vinegar

2 Tbsp Flying Olive Persian Lime Extra Virgin Olive Oil

1 tsp dried mint or 1 Tbsp fresh mint, chopped, and a few sprigs to use for garnish

2 tsp rum or rum flavoring

A pinch of sea salt (I used Hawaiian Sweet and Salty Salt-of-the-Earth and it was really amazing!)*

1 tsp lime zest

2 Tbsp fresh lime juice

½-1 tsp sugar or sweetener (sweeten according to your taste and the sweetness of the fruit)

Directions:

Cut up all the fruit and place it in a large bowl. Mix up the remaining ingredients for the dressing and shake in a glass jar or whisk together. Add about ½ of the dressing. Add more as needed. Reserve the rest. Refrigerate for at least 30 minutes. Toss fruit before serving, add more dressing as needed. Garnish with a mint sprig, if desired.
