Pear and Blackberry Salad with Blackberry Ginger Drizzle

½ cup blackberry jam (seedless works best here)

¼ cup Flying Olive Blackberry Ginger Balsamic Vinegar

1-2 Tbsp honey

1 tsp freshly squeezed lemon juice

4 pears, different colors, if possible, cut into quarters with seeds removed

1 small package of fresh blackberries


Add the blackberry jam, Flying Olive Blackberry Ginger Balsamic Vinegar, honey and lemon juice to a small saucepan. Simmer for about 5-10 minutes until the syrup coats the back of a spoon. Be careful not to overcook or burn the sauce (voice of experience!). Set aside to cool.

Using a mandolin or a sharp paring knife, slice the pears as thinly as possible. Stack in layers, alternating the colors of the pears, skin side out, on small plates.

Top each salad with 6-8 blackberries to each salad. Drizzle with the Blackberry Ginger sauce. Serve.
