White Bean and Tomato Salad

Serves: 4


1 Tbsp Flying Olive Herbs de Provence or Tuscan Herb Extra Virgin Olive Oil

1 tsp Flying Olive Neapolitan Herb or A-1 Premium Balsamic Vinegar

Pinch of salt

¼ tsp freshly ground black pepper

1 medium tomato, seeded, cut into chunks

2 green onions, root end and green top removed, cut into thinround  slices And/Or ¼ tsp onion powder, more to taste

1 Tbsp chopped fresh basil, and extra sprig for garnish, if desired

1 (15.5 oz) Cannellini or Great Northern Beans, rinsed and drained


In a medium bowl, whisk together the Flying Olive Extra Virgin Olive Oil and Balsamic Vinegar of Choice, salt, and pepper. Blend well. Add the tomato, onion powder and/or onions, basil, and the rinsed and drained beans. Gently stir until well mixed.

Refrigerate to blend flavors or serve immediately. Garnish, if desired, with the extra sprig of basil.
