Roasted Cherry Tomatoes with Garlic and Herbs


2 pints cherry tomatoes

3 Tbsp Flying Olive Basil, Garlic, Tuscan Herb, or a Combination of Choice (We like Garlic and Basil, ½ of each)

1-2 tsp minced fresh garlic

½-1 tsp kosher salt

¼ tsp freshly ground black pepper

1 Tbsp minced or chopped fresh basil leaves

1 Tbsp minced or chopped fresh parsley


Preheat the oven to 400 degrees F.

Toss the tomatoes lightly with the Flying Olive Extra Virgin Olive Oil of Choice, garlic, salt, and pepper. Place on a rimmed sheet pan. Spread them out in one layer and sprinkle generously with kosher salt and pepper. Roast for 15 to 20 minutes, until the tomatoes are soft.

Transfer the tomatoes to a serving platter and sprinkle with basil and parsley leaves. Season with salt and more pepper, if desired. Serve hot or at room temperature.
