Green Beans with Lemon, Dijon, and Pine Nuts

Serves: 5-6


1 ½ lbs green beans, ends trimmed

3 Tbsp lemon juice, about 1 ½ lemons

1 Tbsp Flying Olive Gremolata or Lemon Extra Virgin Olive Oil

2 tsp Dijon mustard

½ tsp salt

Pinch of black pepper

2 scallions, ends trimmed, whites and light green only, sliced OR 1 Tbsp shallot, minced fine

2 Tbsp chopped, fresh Italian (flat leaf) parsley

2 Tbsp toasted pine nuts


Bring a large pot of water to boil. Add the beans and cook until they turn bright green, about 3 minutes. Drain well.

Meanwhile, whisk together the lemon juice, Flying Olive Extra Virgin Olive Oil of Choice, Dijon mustard, salt, and pepper in a large bowl. Add the beans, scallions or shallot and toss to coat. Add the parsley and toss. Transfer the beans to a serving platter and sprinkle with the pine nuts.

This can be served warm, room temperature, or chilled.
